POST HARVEST PROFILE OF POTATO

P R E F A C E

Potato is the fourth most important food crop with great potential as a food source for future generation in the world as well as in India. This crop is known for sustaining millions of population by providing food and nutrition during the time of war and hunger. Considering it's importance, United Nations (UN) has declared 2008 as the International Year of Potato. In India, during last five decades, the potato has shown a spectacular growth in acreage and production. It contributes nearly 25000 thousand metric tonnes production during the year 2004. Considering the higher growth in production and its, semi perishable nature, the need of the hour is to give more attention to the post harvest management of the commodity.

This profile has been prepared with a view to enable the farmers to manage scientifically the post-harvest operations in respect of potato crop in order to realize higher price in the market. This profile covers all important aspects of marketing including post-harvest management, marketing practices, quality standards, grading, packaging, transportation, storage and SPS requirements, etc. and could be of immense use to the various stake holders involved with the commodity, in general, and the producer-sellers in particular, in the changing agricultural marketing scenario having global perspective.
