P R E F A C E

|
Potato is the fourth most important food crop with great potential as a food
source for future generation in the world as well as in India. This crop is
known for sustaining millions of population by providing food and nutrition
during the time of war and hunger. Considering it's importance, United Nations
(UN) has declared 2008 as the International Year of Potato. In India, during
last five decades, the potato has shown a spectacular growth in acreage and
production. It contributes nearly 25000 thousand metric tonnes production during
the year 2004. Considering the higher growth in production and its, semi
perishable nature, the need of the hour is to give more attention to the post
harvest management of the commodity.
